You have to try this! Lemon Balm is invasive in the garden and instead of pulling in out year after year you may want to enjoy its light lemony taste in an iced tea. It is a perennial herb that has calming effects and many medicinal properties and is wonderful to use as you would mint or spearmint. Mint is sometimes too strong and can overpower. The Lemon Balm is sweet and less pungent which makes for a very refreshing summer drink.
lemon balm iced tea
1 quart
Ingredients
2 Full stems Lemon Balm
1 Stem Mint
5 slices Fresh Ginger Root
4 Tablespoons Turkish Honey
Water and Ice
Instructions
Put all of the ingredients in a pitcher.
Let sit to blend the flavors for about 1/2 hour
Enjoy over ice.
Notes
You can fill the pitcher with more ice and water to replenish. There is enough flavor in the herbs and ginger for one more infusion.
