Green Goddess Dressing
1 1/4 cup
Ingredients
1 ½ cups Cilantro
1 ½ cups Parsley
1 cup baby Kale or Spinach
1 Tablespoon Fennel tops
2 Tablespoons Cashews or Almonds
½ clove Garlic
1 Lemon (juiced)
¾ cups Extra Virgin Olive Oil
Salt and Pepper
Instructions
In a food processor or blender, puree the “greens” together until finely pureed.
Add the Nuts and Garlic, pulsing until well blended.
Add the Lemon Juice, Salt and Pepper.
Slowly pour in the Extra Virgin Olive Oil with the blender on, adding the Oil until a green “pesto” has formed.
Notes
This is the best dressing every. Simple, tasty and good for you. It adds extra zip to all salads, as a dip or a sauce for any main meal. Basil, Scallions, Watercress or Hot Peppers for added heat can be added or substituted. A ¼ cup of Buttermilk makes it a creamy and tangy dressing and will change it up.
