Biscotti

Ingredients
1/2 cup Toasted, Sliced Almonds
2 ¾ cups Flour
1 ½ teaspoon Baking Powder
1/4 teaspoon Salt
1/2 cup Butter
1 cup Sugar
3 Eggs
1 Tablespoon Water
1 teaspoon Vanilla or Almond extract
1/2 cup Chocolate Chips
Instructions
Preheat oven to 350°
Cream the Butter and Sugar together until light and fluffy.
Scrape down the sides of the bowl and continue beating adding the Eggs in one at a time.
Add the Vanilla extract and continue to mix.
Place the Flour, Baking Soda and Salt in a bowl and stir to combine.
Gradually add the dry ingredients to the Butter mixture adding the Water to moisten the dough.
Turn off the mixer and scrape out the dough onto a floured counter.
Briefly knead the dough and shape it into a flat disk.
Add the Chocolate Chips and Almonds to the dough and knead to just incorporate them evenly into the dough.
Divide the dough in half and shape each into a long, even log shape no more than 1 inch high with tapered sides.
Place the shaped dough on a parchment lined sheet pan and bake in the oven for 15 min.
Let cool, then cut widthwise with a serrated knife into ½ slices.
Carefully lay the Biscotti flat onto the same sheet pan and toast in the oven until just golden brown 5 min or so.
Cool on a wire rack.
Notes
Biscotti is a big favorite in our house. Dip them in Chocolate to be fancy or add all kinds of flavors to the dough such as, Orange zest, Hazelnuts or Dried Fruits. Really any addition makes for a new flavored Biscotti. They wont last in the jar!!!
